2 large eggs, separated
1 3/4 cups milk
1/4 cup vegetable oil
1 3/4 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
Oil and preheat waffle iron.
1. Beat egg yolk, stir in milk and oil.
2. Add flour, sugar, baking powder and salt.
3. Stir just until large lumps disappear.
4. Beat egg whites until stiff and gently fold into batter.
5. Bake and serve.
